Southwest BBQ Chicken Salad~ Tasty Tuesday



I came across this great recipe from Emily at Frilly Details and I knew right away it was one that I had to try! Oh am I glad that I did, this salad is amazing!!

What you need:
3-4 Boneless, skinless Chicken Breasts Your favorite BBQ sauce
1/2 cup sliced onions
A little water

Make It:
In a crock pot add-
Chicken breasts
Your favorite BBQ sauce
A little bit of water
Sliced onions
Cook on low for 7-8 hours. Once done, shred chicken.

Dressing:
1 pack (1oz) Hidden Valley Ranch Dressing Mix
(ignore directions on the packet)
1C mayo
1/2 C milk
1 lime 2 cloves garlic, roughly chopped
1/2 C roughly chopped cilantro
1/4 C green salsa
hot sauce

Place milk, mayo, and ranch mix in a blender. Juice the lime in there too, you should get about 2T juice. Toss in the garlic, cilantro and green salsa. Blend together. Sample it and add hot sauce to taste. Make it several hours ahead of time to allow it to thicken.

Now to put it all together for a yummy dinner! broil a tortilla with a little shredded cheese until melted and use this for the salad bowl.

Then start assembling your salad -
Romaine lettuce
Black beans
Cilantro
Corn
Guacamole
Cotija cheese
Lime
Creamy Lime-Cilantro Dressing







There You have it a yummy, healthy dinner that everyone will enjoy!!
